200px-CTMChicken Tikka masala is chunks of spicy marinated chicken pieces grilled and simmered in a creamy tomato sauce. It’s Indian comfort food and it’s best.

Ingredients:

For the marinade

1. 2 lbs. boneless chicken breast

2. 1/4 cup yoghurt

3. 3 tbsp. minced ginger

4.3 tbsp. crushed garlic

5. 1/4 tbsp. white pepper

6. 1/4 tbsp. cumin powder

7. 1/4 tbsp. mace

8. 1/4 tbsp. nutmeg

9. 1/4 tbsp. green cardamom powder

10. 1/4 tbsp. chili powder

11. 1/4 tbsp. turmeric

12. 3 tbsp. lemon juice

14. 4 tbsp. vegetable oil

15. Melted margarine (for basting)

For the Sauce

1. 5 oz. tomato paste

2. 10 oz. tomato puree

3. 2 lbs. tomatoes, chopped

4. 2 tbsp. ginger paste

5. 2 tbsp. garlic paste

6. 2 tbsp. green chillies

7. 1 tbsp. red chili powder

8. 2 tbsp. cloves

9. 8 green cardamoms 

10. Salt To Taste 

11. 3 tbsp. butter 

12. 2/3 cup cream 

13. 1 tbsp. fenugreek 

14. 2 tbsp. ginger, julienned

15. honey to taste

Procedure:

1. Put all the ingredients for the marinate in a large bowl then Add the chicken breast, cut into 2 inch cubes.

2. Marinate overnight in the refrigerator. Preheat oven to 350º F. Bake the chicken for 8 minutes, basting with margarine twice. Drain excess marinade and bake for another 2 minutes.

3. While doing this, make the sauce . Deseed and chop green chilies. Put tomatoes, tomato paste and tomato puree in a pot and add approximately 4-1/4 cups of water.

4. Add ginger and garlic paste, green chilies, red chili powder, cloves, cardamoms, and salt. Cook over low heat until reduced to a thick sauce. Strain through a strainer and bring to a boil. Add butter and cream and Stir.

5. If the sauce tastes sour, add honey to taste. Add fenugreek and ginger juliennes, stir, and serve with the chicken tikka masala
